Copenhagen has recently seen the opening of yet another great restaurant - this time closely located by Noma, and surely in collaboration with René Redzepi. 108 is located on Strandgade, in a modern industrial interior, with focus on minimalism and good quality furniture. The food is simple and Nordic, with a special focus on local resources and seasons, but with a touch of international recipes, re-thought and processed, by the excellent team of chefs. The kitchen is open, and its a great opportunity to have a look into the stress and perfection, one such kitchen might have - while we, as guests, enjoy every minute of good service and interesting wine options. Try the local apple cider from Æblerov x 108 - a sure hit.
'Throughout the year we pick berries, flowers, mushrooms and nuts preserving the best of each season. We ferment everything from pumpkin seeds to squid guts, brewing new flavors to heighten our dishes. We collaborate with our farmers to better understand our ingredients and our region, in an effort to keep exploring the Copenhagen kitchen. The menu is a la carte for you to make the evening your own.'
